In the past, I have always thought of marinara sauce in the traditional sense and served it with pasta. In an effort to branch out and expand my dinner menu, I tried cooking some different and more creative recipes with Rose Romano's marinara sauces. What did I discover when I used Rose Romano's sauces in new recipes? I discovered that Rose Romano's Italian Peppers Marinara Sauces are both delicious and versatile. These sauces made each meal wonderfully savory and full flavored. The distinct pepper flavor is full bodied enough that I didn't even need to add fresh bell peppers to any of my dishes.
Below are four autumn "tummy warming" meals that I prepared using Rose Romano's Marinara Sauces.
1. MINESTRONE SOUP
Ingredients:
1 16 ounce jar of Rose Romano's Italian Peppers Marinara with Green Bell Pepper
1 medium onion, chopped
3 cloves garlic, minced
2 TBSP olive oil
2 cans (14 1/2 ounces each) gluten free chicken broth (I use Swanson's Natural Goodness Chicken Broth)
1 zuchinni, sliced and quartered
1 16 oz can of light red kidney beans, drained
3 ribs of celery, chopped
2 carrots, peeled and chopped
1/2 bag of frozen mixed vegetables
1 cup gluten free penne pasta
2. ITALIAN-STYLE MEATLOAF
Ingredients:
1 16 ounce jar of Rose Romano's Italian Peppers Marinara with Red Bell Pepper
1 medium onion, chopped
1 cup gluten free breadcrumbs
1/4 tsp oregano
1/2 tsp basil
1 1/2 lb. ground beef
Directions:
Preheat oven to 375 degrees. Mix all ingredients together until well mixed. Spray non-stick spray on all sides of meatloaf pan. Transfer meatloaf mixture to meatloaf pan and pack it in. Optional: coat top of meatloaf with ketchup. Bake meatloaf for 45 minutes to 1 hour.
It's dinner time!
3. TACO SALAD
Ingredients:
16 ounce jar of Rose Romano's Italian Peppers Marinara with Green Bell Pepper
2 pounds ground turkey (or beef)
1 medium onion, chopped
lettuce, shredded
cherry tomatoes, sliced
green, red, orange, and/or yellow red bell peppers, chopped
Tortilla chips
Shredded cheddar cheese (or dairy free shredded cheese) - optional
Directions:
Brown ground turkey (or beef) and chopped onion in a large non-stick skillet. Drain meat. Return meat to skillet and add Rose Romano's Sauce. Bring to a boil. Reduce heat to low and simmer for 10 - 15 minutes. Serve taco meat topped with lettuce, tomatoes, bell peppers and tortilla chips as desired.
4. PASTA WITH MEAT IN MARINARA SAUCE
Of course I had to cook the traditional and hearty meal of pasta and meat in marinara sauce. Rose Romano's Italian Peppers Marinara with Red Bell Pepper is perfect to serve over meat and pasta.
Ingredients:
1 16 oz. jar of Rose Romano's Italian Peppers Marinara with Red Bell Pepper
1 lb. ground beef or ground turkey
1 box of gluten free pasta, spaghetti style
Directions:
Brown ground beef or turkey in a large non-stick skillet. Add marinara sauce to skillet and stir. Reduce heat to low and simmer sauce and meat mixture for 10 minutes. Prepare gluten free pasta according to directions on pasta box. Serve with shredded parmesan or mozarella cheese if desired.
