If your energy level needs a turbo boost, then give this recipe a try.
Ingredients:
2 TBS olive oil
1 lb. frozen shrimp (thaw out frozen shrimp according to package directions)
1 red onion chopped
2 to 3 red, yellow, orange or green bell peppers chopped
2 cups of black rice (I use Lotus Foods Heirloom Forbidden Rice)
Stir Fry Sauce:
4 TBS gluten free soy sauce (Giant Soy Sauce, La Choy Soy Sauce, and Kikkoman Soy Sauce are all gluten free)
1 1/2 TBS honey
2 garlic cloves minced
Directions:
Prepare stir fry sauce by mixing the three sauce ingredients together until the mixture is a smooth blend. Set aside.
Heat oil in a pan (either a wok or large skillet).
Add chopped veggies to the pan and stir fry on medium-high heat for 2 to 3 minutes or until crisp tender.
Remove veggies from the pan and set aside.
Add shrimp to the pan and stir fry on medium-high heat for 3 to 4 minutes or until warm.
Drain shrimp and return shrimp to the pan.
Add stir fried vegetables and stir fry sauce to pan and simmer shrimp and veggies in sauce on medium heat for 2 to 3 minutes.
Serve stir fried shrimp and veggies over black rice. Yum!
**Please note that you can substitute a pound of beef, pork or chicken in place of the shrimp.
